Abstract/Summary

The effects of feeding soy sauce on kidney histology of mice were examined. Forty albino male and female mice were allocated to 0 mL/g (control), 0.03 mL/g, 0.4 mL/g, and 0.81 mL/g soy sauce treatments. The mice were administered with soy sauce via gavage. At the end of 15days treatment, kidney sections were prepared and examined by scoring the glomeruli as normal, nonfragmented necrotic, and fragmented necrotic. At week 1, most of the glomeruli observed consisted of normal and necrotic nonfragmented glomeruli. At weeks 2 and 3, treated mice showed an increase in the number of fragmented necrotic glomeruli compared to the control with mice treated with the highest amount of soy sauce exhibiting the highest number of necrotic fragmented glomeruli. The results show dose and temporal effect of soy sauce treatment on kidney histology. The high salt content of soy sauce and its consumption over time may result in increased overall systemic blood pressure, and increased pressure in the glomerular capillaries which could account for the observed glomerular changes. On the other hand, the test animals may already have pre-existing kidney damage, which was aggravated by the soy sauce treatment.
