Abstract (English)
This study investigated the physical and chemical properties of extracted Adlay (Coix lacryma-jobi) oil from locally known soft variants, Gulian and Kiboa, and hard variants, S4 and S5. Soxhlet extraction was the method used to determine the oil yield using n-hexane as the solvent, with an average percent yield of ____. All four Adlay variants were quantitatively distinguished by measuring the cracking force (in Newtons) using the PASCO Material Testing Machine. The Adlay oil was also compared with a commercially available rice bran oil. The oil quality for each Adlay variant was assessed in oxidative stability by functional group characterization using using Attenuated Total Reflectance - Fourier Transformation Infrared (ATR-FTIR) spectroscopy. Phytochemical analysis was performed and quantified through total phenolic content (TPC), and total flavonoid content (TFC). The antioxidant activity was also evaluated using 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay to calculate for the percent radical scavenging activity (%RSA) and the free antioxidant activity. An intensity of ester carbonyl stretching attributed to triacyglycerols (TAGs) were relatively strong in Gulian and Kiboa, in comparison to S4 and S5, with S4 displaying a spectrum of high aldehyde and ketone carbonyl peaks. TPC concentration (in mg GAE/mL oil) and TFC concentration (in mg QE/mL oil) are notably highest in S4, followed by S5, Rice Bran, Kiboa, then the least for Gulian. Based on the free antioxidant activity and percent radical scavenging activity (%RSA), Kiboa had the highest antioxidant potential compared to other adlay variants and is comparable to the reference of Rice Bran oil. Statistical analysis revealed that there is a significant difference in phytochemical content between hard and soft adlay variants. Overall, findings highlight the clear physicochemical and antioxidant differences among the four Adlay variants.
