Abstract/Summary

Researchers and the crab industry have found ways to develop crab culturing by building hatcheries and formulating diets in the aim of improving productivity but not particularly on the quality. Previous studies have showed that the addition of phosphatidylcholine (PC) has positive effects on the growth, molting, survival and mortality rates of mud crab Scylla serrata. The aim of this study is to determine whether the addition of phosphatidylcholine (PC) in the diet affects the shell quality of juvenile mud crab Scylla serrata. Twenty-eight crabs were fed with diets of squid, without PC and with PC. Shell quality particularly of the carapace was determined by the characterization of chitin and its derivative – chitosan. Based on the ANOVA, no significant difference (p>0.05) was observed between the squid, with PC and without PC diet in the chitin (p=0.262) and chitosan (p=0.565) yield, water binding capacity (p=0.071) and fat binding capacity (p= 0.244). Thus, PC enriched diet has no effect on the shell quality of Scylla serrata.
