Abstract/Summary

The restaurant industry is one of the most vibrant and dynamic enterprises. Creativity and innovation play an important role in the management of the business to meet the changing needs, preferences, lifestyle and taste of the eating public. Keen competition and new trends add excitement and color to the business.

A study of the Philippine restaurant industry includes fine dining/ specialty restaurants, fastfoods, canteen and catering services. It focuses on the key factors that determine the success or failure of the business, the problems, challenges, opportunities and developments using the time tested methods of research, interviews, surveys and observations.

For a start, it gives a background of the industry, providing a historical and current perspectives. A SWOT Analysis, presents the pros and cons of the industry. A STEP Analysis of the industry highlights the factors that have impact on the business. Some conclusions derived are: the industry is growing at a fast rate, particularly the fastfood sector due to the rising customer income, growth of urbanization and young population, increasing female employment and high return on investment. One recent but very important development in the restaurant industry is the growth of franchising, introducing Western food and service to the local scene as well as stiffer competition. With the liberalization of trade, investment and service sectors, more entrants into the restaurant business, either through franchising or direct equity from foreign entrepreneurs are expected in the near future. The use of modern technology and information systems are becoming more of a necessity to make doing business more efficient and cost-effective.
